Contact of cayenne with mucous membranes, especially that of the eyes, causes a sharp burning sensation. The seeds of the fruits are particularly rich in capsaicin, the active substance responsible for this sensation. Some epidemiological data indicate an increased incidence of certain cancers of the digestive organs (stomach, gall bladder) in people who consume a lot of cayenne pepper36-38.
